Last night I didn’t take a pic but smoked a Picahna steak with roasted red bliss potatoes

tonight is homemade enchiladas and Spanish rice.
Picahna is such an underrated cut of meat. I have grilled it and used a sous vide to frying pan method, but have not smoked one yet. Might have to give it a shot.

Smoking it came out exactly like a sous vide would, a light crust and the med rare pink throughout, it was as tender as a filet and so much flavor. The last time I cooked one was Brazilian style with thick cuts on skewers over an open flame. I did like that a little better than smoking it. That and ribeyes are my 2 favorite cuts of meat.

I don’t have a local go to butcher around here that I’ve found yet. We do go out to Lancaster once a year and while we’re out there bring a cooler and stop at a butcher

Been going to the Amish Market for meat. Not disappointed; beef, chicken and everything else is great.

So sad that I’ve lost my local German butcher. Schwinds Pork Store in Rockaway was an institution. Loved their kielbasa and brats. Everything was so good from there.
Try the German butcher in Pompton lakes. I think it's farmstead on main street.Street. love it!!

If you go to a German butcher it is obligatory you get Landjager.

So not tonight’s dinner but tomorrows and next week+. My famous spicy curried lentil soup. Usually I make it with a leftover ham bone but sometimes with chicken thighs. Healthy as it gets. Loads of veggies - carrots, onions, celery, broccoli, cauliflower and peppers. Lentils and barley for healthy fiber. Will trade pts/qts for coral :). Just finished a pot. 3 pts went to sea level and 2 qts are in the freezer.

And basically done. I hate bones, skin etc in my soup so I tie up the thighs in cheesecloth. Now that they’re cooled I carefully shred them and put the meat in the pot. Labor intensive but I’m ocd. Now it just has to sit overnight for everything to meld. Couple weeks of healthy good eats here.
