You will need at least 2. For me the second coat was just enough. 3rd was for good measure. You don't want to put on a heavy coat. Light coats with a good brush.
The thing I like about the stuff I used is that it's an all in one. Stain and poly. No wiping, paint on let it dry steel wool and repeat. I went 24hrs between coats. Stain, 24hrs, very fine steel wool, wipe down with damp cloth, few min later stain again.
Minwax Polyshades is what I used on my stand and loved it. I used Black with a satin finish. I think I did 3 coats with a light steel wooling in-between each one. It also cleans up well too.
