Do you have a sponge or prefilter of any kind any where in the system? Sponge filter, filter fiber, sock or something that may need cleaning or changing? They are known to be nitrate factories when not attended to.

Bacteria have to develop to break the ammonia down to nitrites. Then bacterial have to develop to break the nitrites down to nitrates. Do a search on the nitrogen cycle maybe you can find out more. I don't think this happens in a day.
Bring a water sample to your local pet shop you do business with and have them test the parameters. Get some use out of them. Watch out for what they try to sell you to fix the problem if one exists. You should get a second opinion on equipment or whatever they suggest.
IMO your design will work. Your equalizer line (green line) should be larger than the line you supply the fuge with. The equalizer line has less head pressure to move water to the sump so you need to make that up with volume (a larger line). It should also be drilled low in the fuge so the...
