We have a 65g tank that has our eel, a wrasse, a tang, a hawkfish, a small clown and a dwarf lionfish. The wrasse is the biggest decimator of the snails, second only to the hawk. I do throw 50+ in there once every few months to restock. In the mean time the tank does just fine. The lion doesn't...

How can I tell which carbon we have (bought in bulk from the manufacturer)?

If you don't have your Ca reactor dialed in and know the consequences to your system when running it, I'd leave it off until you can monitor the progress and adjust it as necessary as it ramps up. The water change shouldn't pose any issues.
