Sounds like an interesting idea, IMO. I have no idea whether mollies eat it or not, but I do know they can successfully be kept in saltwater tanks. :)

In my old 75 and in my current 180 I used both Caribsea Aragamax Sugar-Sized Sand: 0.2 - 1.2mm AND CaribSea Arag-Alive Bahamas Oolite Sand 20lbs, and once established never really had/have a problem with it blowing around, even with 2 VorTechs turned up pretty high. My sandbed is around 2".
As Ed already said, there's nothing wrong with it, but I personally don't like it either.
"Sandbed" is another discussion that brings out the best in people. ;D

Since you would like to keep your canopy, a good option would be the TekLight Ready Fit Retros. No wiring involved. For your setup I'd recommend 8 X 80Watts. No overdriving necessary IMHO, as overdriven bulbs need to be replaced more frequently than non-overdriven bulbs. Overdriven bulbs also...

If you don't want to tear it all down, Brian, I'd suggest a Sailfin Tang and a Scribbled Rabbitfish. Both of mine are phenomenal at tearing apart any kind of algae that dares shows up in my tank.
I'd still remove lots of it manually though, as Jim suggested.
