if you have a corner overflow then it should stop when the water level in the tank is below the opening of the overflow. easy way if your sump has room is shut off the return pump and the level should lower itself
you'd know when you saw them if they were pods. they look like a litle white dot with a shrimp tail.. good luck and probably cleaner shrimp if you saw eggs.. usually they will hide from you the day of the hatch then after dark it will swim into the currant and release the eggs.
the shrimp are indeed hermaphrodites.. they posses both organs but as soon as they molt reproduction can occur. When one molts the other will use the opportunity to mate with it and seeing that every time they lay eggs they molt you see how the cycle goes.. Yes one can be carrying fertilized...

should work well for food.. and you are correct about he 40 days.. Most shrimp don't make it past the Metamorphosis phase where they actually walk on the bottom for some reason..
about 40 days from Hatch they will be Juvenile/adults Baby brine shrimp works for them as does cyclopeeze.. My brother has Camel Shrimp babies in his tank .. Two camel shrimp and a lobster is all that inhabit that tank thanks to the lobster
