Those aipstia zappers are excellent at getting mushrooms off of rocks. See if you can borrow one, they are expensive and they actually do not help with aipstia.
+1 to above. They will eat aptasia but generlly if there is no other food and the aptasia are small. Every now and again a rogue peppermint might pick on some LPS but that is very few an far between.

Just about any rock can be used as live rock however some rocks are considered better. The more surface area, the more beneficial bacteria you have, so you want open, pourous rock. This is why the old pound per gallon rule went by the wayside, older rock used to be essentially solid base rock...
Under the rocks is where a lot of stuff can accumulate, so if you are going to be moving some rocks out, go for it. Again, slow and careful and only do a portion at a time followed by a water change.
