I would agree that having basically two return pumps is just setting yourself up for water on the floor.
I also agree that the butterfly and the cleaner wrasse are going to need bigger tanks. The butterfly might also munch on your corals so something to think about.
Congrats on the tank. Realize with the tank on it will shift and then when you fill it with water it might shift again. I would wait until you have water in it to do any shimming unless you saw something that was WAY off and wanted to shim early.
Hermits and snails work great (we love nasasrius snails for this). I would avoid the sand sifting stars, they are too much for our tanks. Adding in the reef flakes I think is a good idea, IIRC a lot of people on here have used them.
A lot of people mix sands as they want different textures in there sand bed. That being said, that looks really chunky which potentially could be a nitrate trap over time. That can be avoided with maintenance and a clean up crew, but something to keep in mind.
