My understanding is that the dogface has that beak, and it continues to grow, like our fingernails. It needs to munch down on hard stuff to wear it down. I know snails are on its menu. Not sure about crabs. I also think they are not reef safe because they find that delectable.

Nothing weird here. Typical cycle. First the ammonia bacteria move in and start to metabolize the ammonia to nitrite. Than the nitrite bacteria move in and convert the nitrite to nitrate. And eventually ammonia and nitrate drop to zero and you have a cycled tank.
