Do NOT use soap to clean the tank, bleach is just fine. After washing with bleach, fill it up and add a good amount of dechlorinator such as SeaChem's Prime, Kordon's Amquel Plus or Hikari's Ultimate. Then rinse again with fresh water and let sit for 24-48 hours to dry...

Yup and that will have zero effect on the overflows.
All tanks have 3/4 returns in them and everybody has to reduce their return plumbing as most pumps are 1-1.5 inch outputs on them.
A T fitting with 45's come off of it make it a modified Y. A lot less restrictive than a T that puts everything at a 90. But her return plumbing is 1.5 inches so a 3/4 T is a moot point. Not to mention that the tank has dual 1 inch drains which I believe are rated at 1200 gph each. Don't know...
There has to be a T in there somewhere if it is splitting to multiple returns. How else would the line split? And actually a Y fitting is better as it is less restrictive than a T.
Also Quiet One pumps are notorious for being loud when used externally.

Try another test kit. Lots of folks have been getting extremely high false readings with Salifert kits lately. Try using an API, Red Sea or other brand of test kit.
