Check if the air intake is restricted. And the water intake is not restricted. Flat head means there is not enough bubbles to hold a head. Sometimes not enough bubble is not visibily obvious.

I feed mine during the day. Put a container on top of it with a hole. Then put the food in with a turkey baster and blow gently. I haven't fed it for a while though. It gets old pretty fast.
PH is more useful. Salinity does not change much between WC if you have a decent ATO. Even PH is not necessary unless you're keeping SPS. I use it to check ALK indirectly.

I would remove the mat. 1. It's ugly. 2. Water trapped underneath your floor is ruined. Just put a couple of towels around the tank when you work on it you will be fine.
